Protein Packed Sweet Potato Pancakes (gluten free & paleo)
2 Eggs, large
3 tbsp Peanut butter or almond butter
1/4 tsp Baking soda
1/2 tsp Vinegar
¾ cup baked sweet potato (mashed and packed when measuring)
Mix all the ingredients in a bowl, whisk to combine well.
Heat a large skillet over medium-low heat. Coat with nonstick spray.
Pour batter into 2-inch diameter circles in skillet. Let cook 2-3 minutes, or until brown, flip, and cook an additional 1-2 minutes.
